A Cool Surfy Beach Cake!

Since my son is a 'Nipper' in the local surf club, we decided - (rather, he decided) - that he wanted a Beach Cake for his upcoming 8th birthday.

We threw several ideas around and came up with this one which he was really impressed with! It was a team effort...it's funny how when kids have direct involvement in cooking and baking they think it tastes better...

It started with a Beach Cake and turned into a Beach Party well worth writing about! Check out our free Beach Party Games, free invitations, decorations and more.

Beach Cake

Ingredients:
2 x standard cake mixes (or double our Butter Cake recipe)
2 cups blue Butter Cream icing
1/2 cup white Butter Cream icing
2 cups plain biscuits, finely crushed
Various plastic sea creatures for decorations
blue colouring (for icing)

Directions:

Bake a 9"x13" oblong cake. When the cake has cooled, cover with a thin layer of icing to keep any stray crumbs in place. This layer of icing will also help keep the 'sand' in place. Before this layer of icing has set, spread the finely crushed biscuits on roughly one third of the cake (to resemble sand).

Put aside for half an hour so the first layer of icing can set.

Next, apply the blue icing for the waves, making sure you swish the icing around to look 'wavy'. When I coloured the icing to make it blue I didn't mix it completely so it had a couple of shades of blue as well as a bit of white in there.

For the final icing treatment I piped some white icing around the edges of the water where it meets the 'sand' as well as some on the 'wave'. I then carefuly swirled it with a thin kebab stick.

Use your imagination to place plastic sea creatures or surfie figurines on your beach cake. We also used a plastic palm tree, some chocolate shells, and a paper cocktail umbrella to set the scene.

Tip 1: Don't forget to place your cake in the freezer for at least a couple of hours (after it has cooled from the oven). This will make it less crumbly when you ice.

Tip 2: Place a thin layer of icing on the entire cake first to keep any crumbs in place before topping with the final layer of icing.
