Chocolate Cake
70g butter
1 cup self-raising flour
1 cup sugar
2 1/2 tablespoons cocoa
1/4 cup milk
1/2 teaspoon vanilla essence
2 cold eggs

Melt butter. Mix dry ingredients, then add butter and mix well. Pour in combined milk and vanilla essence, then beat in eggs. Beat for 2 minutes - mixture should not be sloppy. Pour into a greased 20 cm cake tin and cook at 200 C for 35 minutes, or until a skewer inserted in the centre comes out clean.

Sponge Cake
5-6 eggs
3/4 cup castor sugar
3/4 cup cornflour
1 teaspoon cream of tartar
1/2 teaspoon bicarbonate soda
2 teaspoons plain flour

Beat eggs and sugar for 20 minutes. Sift remaining dry ingredients, then fold into egg mixture. Pour into two greased 18 cm round cake tins and bake in oven preheated to 200 C for 20-25 minutes or until a skewer insertedin the centre comes out clean.

Butter Cake
120 g butter
1 teaspoon vanilla essence
3/4 cup castor sugar
2 eggs
1 1/2 cups self-raising flour, sifted
1/2 cup milk

Cream butter, vanilla essence and sugar in a bowl with an electric mixer until pale and fluffy. Add eggs one at a time, beating well after each addition. Stir in half the flour and milk, stir well, then add remaining half. Pour into prepared pan. Bake in oven preheated to 180 C for 50-60 minutes or until a skewer inserted in the centre comes out clean. This is your typical birthday party cake recipe.

Special Diet Cake (wheat free)
4 eggs
3/4 cup castor sugar
3/4 cup cornflour
1 teaspoon cream of tartar
1/2 teaspoon bicarbonate soda
2 tablespoons custard powder
1/2 teaspoon vanilla essence

Grease 2 x 20 cm sponge tins. Beat eggs and sugar together until white and frothy and increased in volume. Sift in other ingredients and stir with a knife. Pour into the prepared tins and bake in oven preheated to 190 C for 20 minutes or until a skewer inserted in the centre comes out clean. Cool, then decorate. For a chocolate sponge, use 1 tablespoon cocoa instead of custard powder.

Ice-Cream Cakes

Quick Ice-cream Cake 1
1 litre ice-cream
whipped cream

The day before, demould ice-cream onto the serving platter. Decorate with shipped cream and colourful lollies. Return to freezer and freeze overnight. For a healthier alternative, decorate with dried apricots, sultanas and coconut. Serve slices on wafers or scoops in ice-cream cups. A great alternative to your typical birthday party cake recipe.

Quick Ice-Cream Cake 2
2 litres ice-cream
Passion fruit pulp, strained
Strawberry puree
Chocolate chips

Line a 20 cm round cake tin with foil. Divide ice-cream into three batches and mix each batch with one of the above ingredients. Spoon layers into lined cake tin. Freeze overnight, then decorate before serving with coloured sprinkles, candles etc.

CUPCAKE FUN

Basic Vanilla Cup Cake Recipe (makes 12 cakes)
Ingredients
150g softened butter
150g castor sugar
175g self-raising flour
3 eggs
1 tsp vanilla extract

Pre-heat the oven to 350oF (180oC). Line a 12 cup cake pan, with cup cake papers. Crack the eggs into a cup and beat lightly with a fork. Place all the ingredients in a large bowl. Beat with an electric mixer for 2 minutes, until light and creamy. Divide the mixture evenly between the cake cases. Bake for 18-20 minutes until risen and firm to touch. Allow to cool for a few minutes and then transfer to a wire rack. Allow to cool fully before icing. For chocolate cup cakes, add 2 tblspns cocoa powder.

Icings

Honey and Cream Cheese Icing
250 g low fat cream cheese
1-2 tablespoons honey (or to taste)
chopped dried fruit, sultanas (optional)

Blend cheese and honey until smooth. This can be made tastier by adding chopped dried fruit and sultanas.

Basic Butter Cream Icing
125 g softened butter
1 1/2 cups sifted icing sugar
1/2 teaspoon vanilla essence (optional)
2 tablespoons milk

Beat butter in small bowl with electric mixer until as white as possible. Gradually beat in half of the icing sugar, milk, vanilla essence (optional) then remaining icing sugar. Colour as required.
- For chocolate icing, add 1/3 cup cocoa
- For coconut icing, add 1/3 cup coconut

Tip: To achieve a perfect white icing, use vegetable shortening instead of butter. Vegetable shortening is white and easier to colour if needed.

Coconut Frosting
2 cups icing sugar
1 1/2 cups coconut
food colouring
2-3 egg whites

Sift icing sugar into a bowl, add coconut and food colouring, then add enough egg white to make a firm but spreadable frosting. Spread onto a cold cake, then decorate.
