Fairy Toadstool Cake

This Fairy Toadstool Cake was my first real attempt at making a birthday cake, and being my fourth and final child's 1st birthday I thought it was about time I made an effort.

I used a simple sponge recipe and made 2 sponges from 2 different sized Pyrex bowls using this basic recipe but making slightly more for the larger sponge.

125g Castor sugar
125g s/r flour
125g butter
2 eggs
pinch baking powder
1 tsp good vanilla essence.

Cream butter and sugar, add eggs and whisk. Add sieved flour in 2 parts and rest of ingredients but don't over whisk. Perfect light sponge cake!

I bought ready-made regal icing and added food colouring to get the different colours. I then coated both sponges with butter cream and covered the lot. Stuck 3 wooden BBQ sticks in the base sponge and stuck the larger sponge upside down to the smaller, the sticks stopped the top from slipping.

Covered the lot with the icing and decorated further with sweets and Barbie icing pens(the blue makes great water!).

The result is clumsy and far from perfect, but it has a certain rustic charm! LOL. If I was ever mad enough to try this again I would roll the icing even thinner and tuck it completely under the top sponge, or I would just ice the lot with butter icing.
