Hello Kitty Cake

Want to make a Hello Kitty Cake?

Sure, you could go out and buy one. But this cake is one of the easiest cakes I've ever made - and trust me, I'm no baker.

Tip: I replaced the butter from the Butter Cream Icing recipe with melted vegetable shortening (or copha).

This way, the icing stayed nice and white and was easy to spread and smooth.

Ingredients:

3 x standard cake mixes (or triple our Butter Cake recipe)
2 cups White Butter Cream icing (see Tip)
2 x black jelly beans (eyes)
1 x yellow jelly bean (nose)
Licorice strips (whiskers)
Pink colored fondant icing (bow)
Big colored pins to pin template to cake
Hello Kitty Cake Template

    You will need Adobe Reader installed on your computer to open, read, and print this template. If you haven't already got Adobe, you can get it here for free (a new window will open so you can download without leaving this page).

Directions:

Bake an 9"x13" oblong cake and put it in the freezer overnight before decorating it. This decreases the crumbling when decorating and also makes it much easier to cut the cake around the template (without it falling to bits).

Make Hello Kitty's bow with pink coloured fondant icing. You can see how to do this in the video. Set this aside to set whilst decorating the rest of the cake.

Print and pin the outline of the template to the cake. Cut around the template and discard the cake leftovers. Cover the cake with the white icing and smooth over with a spatula. Place the 2 black jelly beans for eyes and the yellow jelly bean for Kitty's nose. (Kitty doesn't have a mouth).

Place Kitty's bow on with a little icing to make it stick. Lastly, cut the strips of licorice and place them on the cake. (You may also need to use a little icing to make them stick).

Voila! You have a Hello Kitty Cake!
