Sponge Cake
by: Anonymous

Here is a recipe I've used with success:

Sponge

* 175g unsalted butter
* 175g caster sugar
* 3 eggs, beaten
* 175g self-raising flour

Filling (optional)

* 3 tbsp strawberry jam
* 500ml double cream

Some tips:
You must use self raising flour - not plain flour (all purpose). Go easy on buttering the cake tin as too much will make the cake crispy on the outside. The oven must be pre-heated before baking and try not to keep opening the oven while the cake is cooking or the cake will not rise properly.

Good luck!
