Actually my friend Alison made this Mermaid Cake. I had the cameras and called "Action!" and doubled as kitchenhand and our kids ate the results! Scroll down to the bottom of this page to see the video.
Here's how we did it....
Cake Ingredients 3 x 340g packet cake mixes (or 3x our standard Butter Cake recipe
Decorations Mermaid Cake Template **
Big coloured pins
1 pkt licorice sticks
1 cup yellow Butter Cream Icing 2 cups blue Butter Cream icing 1/2 cup skin-colour Butter Cream Icing 2 tbspns silver cachous

Red writing icing gel
White writing icing gel
** You may need to photocopy the Mermaid to make her larger after printing. You will also need Adobe to print the file. If you don't already have Adobe, you can get it here for free.
Bake an 9"x13" oblong cake. When the cake has cooled, place it in the freezer for a couple of hours so it doesn't crumble when you start icing.
If you can't locate the licorice sticks, buy a slab in a packet and cut into appropriate strips. Tip: If the licorice is a little stiff, a few seconds in the microwave will soften it enough to bend.
Cut the Mermaid template (as shown on the video) then using pins (big coloured ones so you don't lose them in the cake somewhere)pin the template to the cake.
Ice around the template (we used blue) being careful not to ice over the black outlines of the template too much. Then carefully remove the pins and template. Keep this template handy as you will need to use the guidelines for your licorice.
Using the template as a guide, place the strips of licorice on the outside of the Mermaid on your cake. You can use the licorice to do the inside details of your Mermaid if you wish. We kept it simple in this case and just did the basic outlines.
Using the remaining icing, fill in the Mermaid's body, tail, hair, and arms. We used Yellow for the hair, and tail tip. Purple for the main tail, and skin coloured icing for her face and arms. We then sprinkled silver cachous on the tail.
You will need to cut the licorice for the face details quite small. Use the red writing icing gel to fill in the Mermaid's lips and the white writing icing gel to fill in her eyes.
Alternatively, if you're pressed for time, you can make a plain shaped cake and place these cute Mermaid cake toppers on top of your cake. Or get yourself a Mermaid cake pan.
