Princess Castle Cake

To make this Princess Castle Cake, I made three round Victoria Sponges each a different size. Cut each in half and Spread buttercream and jam in the middle of each one then place back together.

Next roll out pink (or whatever colour you choose to use)regale icing to about a 1/4 inch thick for the largest of the cakes.

Glaze the cake with a thin layer of warm smooth strawberry jam (helps the icing stick) then place the icing over the cake and smooth down. Repeat this process for the other two cakes then layer up one on top of each other,largest at the bottom, smallest at the top.

To make the towers roll more icing into sausage shapes and cut into sizes. Stick around cake with sugar paste of a similar colour. Then roll another colour icing into small balls and tweek one end between your fingers to make into a small points for the turret. Stick to top of the tower shape with sugar paste. Repeat this as many times as you want until you have tower shapes.

Then using a knife add small patterns to the side of the wall to mimmick brickwork.

To make the windows I used black sugarpaste and dipped in a knife and then gently pressed it onto the sides of the cake.

To make the doors I dyed some marzipan brown and cut into arch shapes. I also used marzipan for the branches of the trees. I then cut flower shapes out of different coloured icing using a special little flower cutter that I bought from my local cake decorating store.

The leaves are angelica cut into small pieces which easily stick to the marzipan (and everything else if your not careful). Then I stuck the flower shapes on with some more gooey icing.

The princess decoration was pre-bought from the cake decorating shop. I wrote the message for my daughter with a glitter icing pen. As an optional extra you can sprinkle edibal glitter to give it a magical touch.

My children thought it was wonderful and couldn't wait to eat it. In fact my son wants one the same but in grey (with a dragon on) for his birthday so watch this space!!!!!
