Justin's 2nd Birthday Train Cake

I was 40+ weeks pregnant and couldn't be bothered spending hours making a cake! I still didn't want my 2yo son to miss out, so I put together this easy lamington cake!

It is a full lamington roll for the engine, with individual lamington carriages. Each carriage is connected with chocolate bullets, held in place by melted chocolate used as "glue". Each carriage has "cargo", which was smarties, again held in place by melted chocolate. The wheels can be any chocolate biscuit you like, with melted chocolate to hold them in place also. You can decorate as you like - this is just an example to inspire you!

It was the perfect birthday cake for a mum who was overdue with her next child. Very easy and still looked great. My 2yo loved it!!
